Looking toward berry season

by Aron on April 6, 2011

Not until late-Spring do the local, tri-state strawberries (amazingly good) come out, but until then there are some remarkably good imports becoming available. Their arrival has made me start craving (why is Ashley the only allowed to have cravings?) a salad we first made last year.
Here is how you can try it:
  • Slice a handful of strawberries
  • Crumble some slightly aged chèvre
  • Heat 2T of balsamic vinegar with a a teaspoon of sugar until it has reduced its volume and is slightly thick (optional–straight balsamic works, too)
  • Add to the vinegar 1T of olive oil (I was excited to finally open our bottle from Sardinia
  • Mix a handful of pecans with 1t melted butter and 1t of sugar; roast them for 5 -10 min at 350 just until the sugar has melted and the nuts are toasted
  • Toss the above ingredients with a bag of spinach, crumbling the aged chèvre over the top last
This salad is great one its own, or with a steak.
If anyone tries it, I’d love to hear how it goes.

The thrill of walking into the market to see the jewel colored berries back…is the BEST. Can't wait to go berry picking as well, enjoy!

Beautiful salad! I look forward to adding pecans and cheese.
I toss in frozen blueberries gently melted in my spinach and strawberry salad.

I love salads with strawberries and goat cheese. The slight tanginess of the cheese go so well with the sweet berries. Just bought some last night!!

yum. this is one of my favorite salad combos. back when I was a meat eater, I used to top it with some prosciutto, cooked to a crisp in the skillet!

I have been eating strawberries like they're going out of style lately. And they're totally not, since the season is just about to begin. Yesss!

I found your blog and it's very lovely.

This salad looks dellicious.
Do you pour dressing while it's still warm or has to wait till get cool?
I would love to try it.

I love salads like this. Very simple, not overloaded with stuff or dressing. Boston is slightly behind the NY area season so I'm hoping things will start to get growing so I can have fresh local strawberries soon.
