Summer picnics on the river

by Aron on July 11, 2011

Ashley made us a wonderful picnic that we enjoyed the other night on the Hudson (our favorite summer dinner spot). Her blueberry crisp was delicious, but my favorite dish–and the one that I’ve asked her to make me again on several occasions this past week, was a salad of watermelon, feta, and basil. It is so, so good.

Last week, by the way, was the first week filled with fireflies! The shadows at dusk light up with them–it’s magic when they appear in the parks. They’re not around for long…

I've been on the hunt for a picnic blanket and that may be the prettiest one I've seen! Do you mind sharing where you got it?

I second Rebecca – details on that blanket?!

Every night, I head out to sit in the veggie/cutting garden or to the hammock with a Gimlet or beer to watch the fireflies (or glowbugs, as we call them). Country living has its perks because we get those little glowbugs nearly all summer long! We are having our annual Barnside Movie party this weekend, and it will be so fun to watch the little bugs light-up against the giant screen on the barn.

What a wonderful post! I love the idea of a picnic…without ants! Me and my ants have not been having a co-operative time of late! LOL And as much as I love watermelon, I've never had it with feta cheese and basil! O_0 I need to get out more…clearly!! ^_^

I love your picnic blanket! Indian tapestries are the best for outdoor meals. Good job, Ashley!

Thanks, all! I'm afraid I have news on the blanket that you might not like, though… no local source, we brought it home from India.

Joslyn–the blueberry crisp was made with a modified Epicurious recipe (my go-to source). I look at a few crumble/crisp recipes and basically just made a topping with crushed toasted pecans, butter, rolled oats, flour, brown sugar, white sugar, cinnamm on and nutmeg. You could also use honey. I've generally found that if it tastes good before you bake it (like you could eat the whole bowl of topping over ice cream uncooked), it will be good baked. I sprinkled a little sugar over the blueberries, covered them in topping and 350 for 40 min. But you can find better directions, no doubt, on Epicurious. Have fun!

We saw the fireflies a few weeks ago in Teardrop Park! Such a fun thing to see in the city.

Oh my, that watermelon salad is exactly what I feel like eating… right now! Is there some sort of vinaigrette?

Beautiful pictures!

Super simple: just watermelon, feta, and basil–the better your ingredients, the better the salad! I have to say, Trader Joe's has a great feta in brine.
