Key lime pie

I am loathe to turn on the oven in the summer–even to make dessert.
Key lime pie* allows for a minimum of oven use, so it seemed a perfect choice for dinner at our friends’ home recently. Ashley was chief-baker, while I documented her every move.

She teases me to no end about this, but my grandmother told me never to share our family’s secret recipes–so I searched online for a one I could endorse, and found this from Gourmet–but the real secret is adding extra lime zest!

{it’s best to keep the crust simple–graham crackers and butter}

{give the filling plenty of hours to set, and decide whether or not to serve with whipped cream}

It’s one of Ashley’s favorites.

*Technically–as my father would no doubt point out–this is not Key Lime Pie, but simply Lime Pie unless you use Key Limes (a specific species, named for its association with the Florida Keys). If you use fresh juice and zest, it shouldn’t matter.

Did you know that in Mexico we call the green ones(limones)translates to lemons and the yellow ones are called limas (limes). My hubby always teases me that I'm calling them the wrong name!

grew up on Key Lime pie… the more tart the better. Throw some vanilla icecream on it for a creamier, less tart flavor… I love ZEST!

This looks so good! I love making citrus pies. I will admit to adding brown sugar and ground pecans to my pie crust though. It complicates it just a bit, but that toasted nut and caramilzed sugar flavor is incredible!

Agree with the oven issue, especially since we have no A/C in Germany!

I think you two should apply to be on this show. I think you would do very well!

I wonder if Aron might miss the OR while we're off kicking arse on the game show? Because of course we'd kick arse. :) Thanks for the vote of confidence! I'll have to check it out.

And Pinecone camp–you definitely have to check out Lime pie! The only thing I don't like it when it's gone (inevitably too soon).

This is almost too much, but one of my wine vendors told me that she bakes pie in the summer in her toaster oven that she sets up on the porch! I tried it this weekend and learned that pie pans do not fit in my toaster. I also learned that my toaster doesn't work when the door isn't shut all the way. But you should try yours!
